Batter

  • 1 cup gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup lactose-free milk Can substitute with almond or oat milk for vegan option
  • 1/4 cup melted butter Can substitute with plant-based butter for vegan option
  • 1 teaspoon ground cinnamon (optional) For added flavor

Preparation

  • Preheat your oven to 350°F (175°C).
  • If using fresh peaches, peel and slice them. Mix with 1/2 cup of sugar, lemon juice, and vanilla extract. Allow to sit for about 10 minutes.

Batter Preparation

  • In a separate bowl, combine the gluten-free flour, baking powder, salt, and the remaining sugar.
  • Gradually add the lactose-free milk and melted butter into the dry ingredients, stirring until well combined.

Baking

  • Pour the peach mixture into a greased baking dish.
  • Spread the batter evenly over the peaches, then sprinkle with cinnamon if desired.
  • Place the dish in the oven and bake for 45-50 minutes, or until the topping is golden brown and the peaches are bubbly.
  • Serve warm, possibly with a scoop of dairy-free ice cream.

Notes

Use ripe peaches for better flavor. Allowing the peach mixture to rest before baking helps meld flavors. For variations, consider adding a streusel topping or mixed berries.
