For the topping

  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted Can be substituted with coconut oil for a vegan option.
  • 1/4 cup milk (dairy or non-dairy) Use almond milk or coconut milk for dairy-free option.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the sliced peaches with sugar, lemon juice, vanilla extract, and cinnamon. Stir gently to coat the peaches evenly.
  • Transfer the filling to a greased 9x13-inch baking dish, spreading it evenly across the bottom.
  • In another bowl, mix together the gluten-free flour, sugar, baking powder, and salt. Pour in the melted butter and milk, stirring until just combined.
  • Spread the topping over the peach filling, trying to cover as much surface area as possible, although it's okay if some filling peeks through.

Baking

  • Bake in the preheated oven for about 35–40 minutes, or until the topping is golden brown and a toothpick inserted comes out clean.
  • Let it cool for a few minutes before serving.

Notes

This cobbler can be stored in the refrigerator for up to 3 days. To reheat, warm in the oven until heated through. It also freezes well when tightly sealed.
