Pasta Ingredients

  • 2 cups gluten-free all-purpose flour Ensure it contains xanthan gum for best results.
  • 3 large eggs Large eggs are preferred for binding.
  • 1 tablespoon olive oil Enhances the flavor and texture.
  • 1 teaspoon salt For seasoning.
  • as needed water water Add as necessary to adjust dough consistency.

Preparation

  • In a large mixing bowl, combine the gluten-free flour and salt. Stir well to ensure the salt is evenly distributed.
  • Create a well in the center of your flour mixture, then crack in the eggs and add the olive oil. Using a fork, gently whisk the eggs and oil together, gradually incorporating the flour around the edges of the well until the mixture starts coming together.
  • Once the mixture holds together, turn the dough out onto a lightly floured surface. Knead gently for about 2-3 minutes until it forms a smooth ball. If the dough feels too dry, add a little water, one teaspoon at a time, until it reaches a workable consistency.
  • Wrap the kneaded dough in plastic wrap and let it rest at room temperature for about 30 minutes.

Rolling and Cutting

  • Divide the dough into four pieces. Work with one piece at a time, keeping the others wrapped to prevent drying. Roll out the dough using a rolling pin or pasta machine to your desired thickness, sprinkling a little gluten-free flour to prevent sticking.
  • Once rolled out, cut the dough into your preferred pasta shapes such as fettuccine or lasagna sheets and dust with a little more flour.

Cooking

  • Bring a large pot of salted water to a boil. Gently drop in your pasta and cook for 3-4 minutes or until al dente.
  • Drain the pasta and serve it with your favorite sauce or toss it with sautéed seasonal veggies and a drizzle of olive oil.

Notes

Using a gluten-free flour blend that contains xanthan gum will improve the texture of your pasta. Keep portions of dough covered to prevent drying out. Get creative with pasta shapes, especially if cooking with kids!
