Ingredients
  

Gluten Free Parkin

  • 175 g gluten free flour blend
  • 100 g rolled oats
  • 100 g brown sugar
  • 150 g treacle or molasses For a lighter flavor
  • 125 ml almond milk Or any dairy-free milk
  • 1 tsp ground ginger
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • a pinch salt

Dairy and Gluten Free Gingerbread Cookies

  • 250 g gluten free flour blend
  • 100 g brown sugar
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking powder
  • 120 g dairy-free butter or coconut oil
  • 1/4 cup molasses

Lebkuchen Cookies

  • 250 g gluten free flour blend
  • 75 g honey
  • 100 g brown sugar
  • 2 tsp baking powder
  • 1 tbsp ground almonds
  • 1 tsp mixed spice (cloves, nutmeg, ginger)
  • to taste Icing sugar for decoration

Instructions
 

Gluten Free Parkin

  • Preheat your oven to 160°C (320°F) and grease a square baking tin.
  • In a mixing bowl, combine the gluten free flour blend, oats, ground ginger, cinnamon, baking powder, and salt.
  • In another bowl, mix the treacle and almond milk until smooth.
  • Gradually stir in the dry ingredients until fully combined, ensuring there are no lumps.
  • Pour the mixture into the prepared baking tin and bake for about 30-35 minutes.
  • Allow to cool in the tin before transferring to a wire rack.

Dairy and Gluten Free Gingerbread Cookies

  • Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  • In a bowl, cream together the dairy-free butter (or coconut oil) and brown sugar until fluffy.
  • Beat in the molasses and egg (or flaxseed mix for a vegan option).
  • In a separate bowl, whisk together the gluten free flour, baking powder, and spices.
  • Gradually add the dry ingredients to the wet mixture until a dough forms.
  • Roll out the dough on a floured surface to about 5mm thickness and shape with cookie cutters.
  • Bake for 10-12 minutes or until slightly firm. Cool on the tray for a few minutes before transferring to a wire rack.

Lebkuchen Cookies

  • Preheat your oven to 180°C (350°F) and prepare a baking tray with parchment.
  • In a bowl, whisk together honey, brown sugar, and the egg until smooth.
  • Gradually mix in the gluten free flour, baking powder, ground almonds, and mixed spice.
  • Drop spoonfuls onto the baking tray, spacing them apart.
  • Bake for 10-12 minutes. Once cooled, dust with icing sugar.
