  • 2 cups gluten-free all-purpose flour A blend that contains xanthan gum works best.
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet active dry yeast (about 2 ¼ teaspoons)
  • ¾ cup warm milk or a non-dairy alternative
  • 2 tablespoons butter or a dairy-free substitute, melted
  • 2 large eggs or substitute with flaxseed meal for vegan option

Preparation

  • In a small bowl, combine warm milk and sugar, then sprinkle the yeast over the top. Let it sit for about 5–10 minutes until it's frothy.
  • In a large mixing bowl, whisk together the gluten-free flour and salt. Add the yeast mixture, melted butter, and eggs. Mix until a soft dough forms.
  • Lightly flour a clean surface with gluten-free flour and knead the dough for about 5 minutes.
  • Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for about 1 hour or until doubled in size.

Shaping and Rising

  • Once risen, punch down the dough and turn it out onto a floured surface. Divide it into 12 equal pieces. Form each piece into a ball and place it in a greased baking dish.
  • Cover the rolls with a towel and let them rise again for about 30 minutes.

Baking

  • Preheat your oven to 375°F (190°C).
  • Bake the rolls for 15–20 minutes until golden brown.
  • Brush them with melted butter as soon as they come out of the oven for an extra touch of richness.

Notes

Use fresh ingredients for the best rise and do not rush the rising times for fluffy rolls. Consider using a blend of gluten-free flour with xanthan gum for better results.
