Ingredients
  

  • 2 cups shredded cooked chicken
  • 1 cup long grain white rice (or brown rice)
  • 1 can (4 oz) mild diced green chiles
  • 1/2 cup cream cheese
  • 1 cup unsweetened almond milk
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • to taste salt and black pepper
  • 1 tbsp lime juice (optional)
  • 2 tbsp chopped fresh cilantro (optional)

Instructions
 

  • Heat olive oil in a large pot or deep skillet over medium heat. Add chopped onions and garlic and sauté until softened, about 3–4 minutes.
  • Stir in rice, cumin, chili powder, salt, and pepper. Toast for 1–2 minutes to deepen flavor.
  • Add chicken broth, almond milk, diced green chiles, and cream cheese. Stir to combine.
  • Bring to a gentle simmer. Cover and cook over low heat for 18–20 minutes, or until rice is tender and liquid is mostly absorbed.
  • Remove lid and stir in shredded chicken and cheddar cheese. Let cheese melt and mixture thicken slightly.
  • Finish with lime juice and cilantro if using. Taste and adjust seasoning as needed. Serve warm.

Notes

Use dairy free cheese and cream cheese to make this dish completely dairy-free. Brown rice can be substituted but will require a longer cooking time. Garnish with lime juice and cilantro for extra brightness, or swap rice with cauliflower rice for a low-carb version. Freezer-friendly and perfect for meal prep.
