Preparation

  • Season the chicken pieces with salt and pepper. Heat the olive oil over medium heat in a large skillet and add the chicken. Sear until both sides are golden brown, about 5-7 minutes on each side. Once cooked through, remove from the pan and set aside.

Cooking

  • In the same skillet, add the chopped onions and garlic. Sauté for about 3 minutes until the onions are translucent. Then, add the sliced mushrooms and cook until tender and browned.
  • Pour in the chicken broth and add the thyme. Stir well to combine and let it simmer for about 5 minutes.
  • Return the seared chicken to the skillet, nestling it among the mushrooms. Cook for another 5-7 minutes on low heat to absorb flavors.
  • Garnish with fresh parsley and serve hot. This dish pairs well with rice or gluten-free pasta.

Notes

Leftovers can be stored in airtight containers in the refrigerator for up to 3 days and reheated gently. For a creamier sauce, consider adding a splash of coconut milk or gluten-free heavy cream before serving. Freeze leftovers for up to 3 months.
