Gluten Free Lemon Bars

These bright, creamy gluten free lemon bars bring together a tender shortbread crust and a luscious lemon filling , completely wheat-free, dairy-optional, and endlessly adaptable for dietary needs.

Ingredients
  

  • 1 1/2 cups almond flour
  • 1/4 cup tapioca starch
  • 1/4 cup coconut oil or unsalted butter, melted
  • 2 tbsp maple syrup or cane sugar
  • 1/4 tsp salt
  • 1/2 cup fresh lemon juice (Meyer lemons if available)
  • 1 tbsp lemon zest
  • 3 large eggs (or chia egg substitutes)
  • 1/2 cup coconut milk or regular milk
  • 1/3 cup cane sugar or coconut sugar
  • 2 tbsp arrowroot starch (for thickening)
  • powdered sugar or lemon slices for garnish (optional)

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
  • In a bowl, mix almond flour, tapioca starch, salt, coconut oil, and maple syrup until crumbly. Press firmly into pan to form crust.
  • Pre-bake the crust for 12–14 minutes until just golden around the edges. Remove from oven and keep oven on.
  • In a separate bowl, whisk lemon juice, zest, eggs (or chia mixture), coconut milk, sugar, and arrowroot starch until smooth.
  • Pour filling over hot crust and return to oven. Bake 18–20 minutes until center is just set (a slight jiggle is okay).
  • Cool bars completely in the pan. Chill for 1 hour for best slicing. Dust with powdered sugar or top with lemon slices before serving.

Notes

Use coconut oil or vegan butter for dairy free. For egg-free, sub chia eggs (1 tbsp ground chia + 2.5 tbsp water per egg) and 2 tbsp arrowroot starch. Let bars cool fully before slicing for clean edges. Dust with powdered sugar or top with thin lemon slices to finish.
