Ingredients
  

  • 1 lb sweet Italian sausage
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 can 28 oz crushed tomatoes
  • 4 cups gluten-free chicken or vegetable broth
  • 1/4 cup red wine optional
  • 8 oz gluten-free lasagna noodles broken into pieces
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 cup ricotta cheese or dairy-free alternative
  • Fresh basil for garnish
  • Grated parmesan or dairy-free cheese for topping

Instructions
 

  • In a large pot, brown the Italian sausage over medium heat. Add diced onion and cook until soft, then stir in garlic.
  • Pour in crushed tomatoes, broth, red wine (if using), oregano, basil, salt, and pepper. Stir well and bring to a simmer.
  • Break gluten-free lasagna noodles into pieces and add to the pot. Cook, stirring occasionally, until noodles are tender but not mushy.
  • Taste and adjust seasoning as needed. If desired, stir in fresh spinach or a spoonful of pesto for extra flavor.
  • Ladle soup into bowls. Top each with a dollop of ricotta, a sprinkle of parmesan, and fresh basil.
  • Serve hot with gluten-free bread for dipping.

Notes

For best results, choose sturdy gluten-free lasagna noodles that hold up in soup. Store leftovers in the fridge for up to 3 days. If freezing, freeze the broth base without noodles and add fresh noodles when reheating.
