  • In a large mixing bowl, combine the gluten-free flour, sugar, salt, and instant yeast. Mix thoroughly before adding the warm milk, pineapple juice, melted butter, and eggs. Stir until a soft, but not sticky, dough forms.
  • Lightly dust a clean surface with gluten-free flour and knead the dough for about 5-7 minutes, ensuring it is well mixed but remains soft.
  • Transfer the dough back into the bowl, cover it with a cloth, and let it rise in a warm spot for about 1 hour, or until it has doubled in size.
  • After rising, punch down the dough and divide it into equal portions. Shape each portion into a ball and place them in a greased baking dish.
  • Cover the shaped rolls with a tea towel and let them rise again for about 30-40 minutes, until they are puffed up and touching each other.
  • Preheat your oven to 350°F (175°C). Bake the rolls for 20-25 minutes or until golden brown on top.
  • Allow the rolls to cool for about 10 minutes before serving. They are best enjoyed warm, ideally slathered with butter or spread your favorite topping.
