Dough Ingredients

  • 2 cups Gluten free all purpose flour blend (with xanthan gum, or add it separately) Use a gluten-free flour blend meant for baking.
  • 1 packet Instant yeast
  • 2 tbsp Sugar or honey Just a little to wake up the yeast.
  • 1 cup Warm milk or warm water Milk adds richness.
  • 1 large Egg For structure and softness.
  • 2 tbsp Olive oil or melted butter
  • 1 tsp Salt
  • 3 cloves Garlic (fresh or garlic powder) Fresh is best.
  • 1/2 cup Parmesan cheese (finely grated) Melts into the topping.
  • 2 tbsp Parsley (optional) For garnish.

Instructions
 

Preparation

  • Mix the warm milk or water with yeast and sugar, then let it sit for a few minutes until foamy.
  • Stir in the egg, oil, and salt.
  • Mix in the flour blend until you achieve a soft, slightly sticky dough.
  • Rest the dough for 10 minutes.
  • Oil your hands, roll pieces of dough into ropes, and tie them into knots.
  • Let the knots rise until they look slightly puffy.

Baking

  • Preheat the oven and bake the knots until lightly golden.
  • Brush with garlic butter and sprinkle with parmesan immediately after baking.

Notes

Let the knots sit for about 5 minutes before serving to allow the crumb to set. Store leftovers in an airtight container at room temperature for up to 2 days.
