Gluten Free Garlic Chicken Lasagna (Celiac Friendly)

Ingredients
  

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups shredded cooked chicken
  • 1 tsp dried thyme
  • salt and pepper to taste
  • 3 tbsp butter
  • 2 tbsp gluten-free all-purpose flour
  • 2.5 cups milk or plant-based milk
  • 1 tsp garlic powder
  • 0.25 tsp nutmeg (optional)
  • 0.5 cup grated parmesan cheese
  • salt to taste
  • 9–12 gluten-free lasagna noodles (pre-cooked if required)
  • 1.5 cups ricotta or cottage cheese
  • 2 cups shredded mozzarella
  • chopped parsley, for garnish

Instructions
 

  • Heat olive oil in a pan over medium heat. Sauté onions and garlic until soft. Add shredded chicken and thyme. Season with salt and pepper. Cook for 3–4 minutes, then remove from heat.
  • In a saucepan, melt butter over medium heat. Whisk in gluten-free flour to form a roux. Gradually pour in milk, whisking constantly. Add garlic powder, nutmeg, and parmesan. Simmer until thickened, about 5–7 minutes. Season to taste.
  • Preheat oven to 375°F (190°C). In a 9x13-inch baking dish, add a thin layer of garlic sauce. Layer noodles, half the ricotta, half the chicken mixture, a handful of mozzarella, and more sauce. Repeat once more. Top with final noodles, sauce, and mozzarella.
  • Cover with foil and bake for 25 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden. Let rest for 10 minutes before slicing. Optional: broil for 2–3 minutes for a crispy top.

Notes

Make it dairy-free by using plant-based milk, cheese, and butter. Add sautéed spinach or zucchini between the layers for extra veggies. Let it rest before slicing for clean portions. Freezer-friendly and great for make-ahead dinners.
