Ingredients
  

For the crust

  • 1.5 cups gluten-free all-purpose flour Make sure it's certified gluten-free.
  • 0.5 teaspoons baking powder Ensure it's certified gluten-free.
  • 0.5 teaspoons baking soda Ensure it's certified gluten-free.
  • 0.25 teaspoons salt
  • 0.5 cups unsalted butter, softened
  • 0.5 cups brown sugar
  • 1 piece egg
  • 1 teaspoons vanilla extract

For the frosting

  • 8 oz cream cheese, softened Can substitute with a vegan alternative for dairy-free version.
  • 0.5 cups powdered sugar
  • 1 teaspoons vanilla extract
  • 1 tablespoon honey or maple syrup Optional for added sweetness.

For the toppings

  • 1 assorted fresh fruits (strawberries, blueberries, kiwi, mandarin oranges, etc.) Use any fruits of choice.
  • to taste honey or agave syrup Optional for drizzling.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix the dry ingredients: gluten-free flour, baking powder, baking soda, and salt. Set this aside.
  • In your stand mixer or a large bowl, cream together the softened butter and brown sugar until it's light and fluffy—about 2-3 minutes.
  • Add in the egg and vanilla extract, continuing to mix until combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. The dough should be soft and slightly sticky.
  • Spread the dough into a greased 12-inch pizza pan, making sure to press it evenly and into the corners.

Baking

  • Bake for 12-15 minutes or until the edges are lightly golden. Remove and let it cool completely.

Frosting Preparation

  • While the crust cools, prepare the frosting. In a separate bowl, use a hand mixer to beat together the cream cheese, powdered sugar, vanilla extract, and honey until smooth and creamy.

Assembly

  • Once the crust is completely cool, spread the frosting evenly over the top of the cookie crust.
  • Top with fresh fruits of your choice, arranging them in a colorful pattern.
  • Drizzle with honey or agave syrup as desired.
  • Slice your Gluten Free Fruit Pizza and serve it chilled or at room temperature.

Notes

Make sure that all your ingredients, especially the baking powder and flour, are certified gluten-free to avoid any contamination. For an eye-catching presentation, arrange your fruits in circles or patterns. You can refrigerate the cream cheese frosting for about 30 minutes before using it for easier spreading. Add bananas just before serving to avoid browning.
