Preparation

  • In a small bowl, combine warm water, sugar, and instant yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  • In a large mixing bowl, whisk together the gluten-free flour and salt.
  • Once the yeast mixture is frothy, add it to the bowl with dry ingredients along with 1/4 cup of olive oil. Mix until a thick batter forms.
  • Transfer the batter to a greased 9×13-inch baking pan, smoothing it out with a spatula. Cover it with a towel and allow it to rise in a warm place for about 30-45 minutes or until it doubles in size.
  • While the dough is rising, preheat your oven to 400°F (200°C).
  • Gently press your fingers into the risen dough to create dimples. Drizzle with more olive oil and sprinkle your desired toppings.
  • Place the focaccia in the oven and bake for 20-25 minutes, or until golden brown on top.
  • Once baked, remove the focaccia from the oven and allow it to cool slightly before cutting.
  • Enjoy it warm or at room temperature!
