Ingredients
  

  • 1 ½ lbs ground beef (80/20 for best moisture)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • ½ cup gluten-free breadcrumbs or crushed rice crackers
  • ¼ cup milk or unsweetened almond milk
  • 2 tbsp ketchup (plus more for topping)
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • ¼ cup ketchup (for glaze, optional)
  • 1 tbsp maple syrup (for glaze, optional)
  • 1 tsp apple cider vinegar (for glaze, optional)

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  • In a small skillet, cook chopped onions over medium heat until translucent (about 3–4 minutes). Add garlic and sauté for another 30 seconds. Let cool slightly.
  • In a large bowl, combine the ground beef, sautéed onions and garlic, eggs, breadcrumbs, milk, ketchup, mustard, Worcestershire, oregano, salt, pepper, and parsley. Mix with clean hands until just combined. Don’t overmix.
  • Shape the mixture into a loaf and place it on your prepared sheet or in a loaf pan. If using the glaze, whisk ketchup, maple syrup, and vinegar together and spread half over the loaf.
  • Bake for 45–55 minutes or until internal temp reaches 160°F (71°C). Brush on remaining glaze during last 10 minutes if desired.
  • Let the meatloaf rest for 10 minutes before slicing. This helps it hold together better.

Notes

Let the meatloaf rest before slicing for clean cuts. For a dairy-free version, use almond or oat milk. Leftovers are great in sandwiches or crumbled into pasta. Optional glaze adds extra depth don't skip it if you love a touch of sweetness!
