Ingredients
  

Dry Ingredients

  • 2 cups gluten-free all-purpose flour (ensure it’s a blend with xanthan gum) Use a kitchen scale for precision.
  • 1 tablespoon instant yeast Ensure it's fresh for best results.
  • 1 tablespoon sugar Alternatively, use honey for a softer roll.
  • 1 teaspoon salt
  • 1 teaspoon apple cider vinegar

Wet Ingredients

  • 1 cup warm water (about 110°F/43°C) Water should be warm to activate yeast.
  • 1/4 cup olive oil (or melted coconut oil) Choose based on dietary preferences.
  • 2 large eggs Room temperature works best.

Activation

  • In a small bowl, mix warm water, sugar, and instant yeast. Wait for about 5 minutes or until it becomes frothy.

Mixing

  • In a large mixing bowl, whisk together the gluten-free flour, salt, and apple cider vinegar.
  • In another bowl, combine the eggs and olive oil. Add the frothy yeast mixture to this bowl, stirring until well blended.
  • Pour the wet mixture into the bowl of dry ingredients. Stir until the dough is smooth and sticky. It should hold together but be slightly tacky.

Shaping and Rising

  • Grease your hands with olive oil, then scoop out about 2 tablespoons of dough for each roll. Shape them gently into balls and place them in a greased baking dish, close but not touching.
  • Cover the rolls with a clean kitchen towel. Let them rise in a warm area for about 30 minutes, or until they have puffed up.

Baking

  • While the rolls are rising, preheat your oven to 375°F (190°C).
  • Once the rolls have puffed, bake in the preheated oven for 20-25 minutes, or until they are golden on top and sound hollow when tapped.
  • Allow the rolls to cool slightly in the pan before serving them warm.

Notes

Use a kitchen scale for precision, don’t skip the resting time for better texture, and ensure the rolls are baked thoroughly by tapping for a hollow sound.
