Dough Ingredients

  • 2 cups gluten-free all-purpose flour (ensure it contains xanthan gum) Use a good quality blend.
  • 1 packet instant yeast (2 ¼ tsp) Ensure yeast is fresh.
  • 1 teaspoon salt
  • ¼ cup granulated sugar
  • ½ cup warm milk (dairy or a plant-based alternative) Ensure it's not too hot.
  • ¼ cup unsalted butter, melted (or a plant-based substitute) Melt before using.
  • 2 large eggs Or use flax eggs for vegan option.
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar

Preparation

  • In a large mixing bowl, combine the gluten-free flour, instant yeast, salt, and sugar. Mix these dry ingredients well.
  • In another bowl, whisk together the warm milk, melted butter, eggs, vanilla extract, and apple cider vinegar until combined.
  • Gradually pour the wet ingredients into the dry ingredients, stirring with a spatula or wooden spoon until a dough forms.
  • Lightly flour a clean surface with gluten-free flour and knead the dough for about 2-3 minutes until it’s smooth.
  • Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Shaping and Baking

  • After the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a large circle about ¼ inch thick.
  • Cut the dough into 8-12 triangles, depending on how large you want your crescent rolls.
  • Starting from the wide end of each triangle, gently roll the dough towards the point to form a crescent shape.
  • Place each roll on a baking sheet lined with parchment paper.
  • Cover the crescent rolls with a towel and let them rise for another 30-45 minutes until puffy.
  • Preheat your oven to 375°F (190°C). Once preheated, bake the rolls for 12-15 minutes, or until golden brown.
  • Allow the rolls to cool slightly on a wire rack, then serve them warm.

Notes

Make sure your ingredients are at room temperature for the best texture. Test your yeast before starting by adding it to warmed milk with a pinch of sugar; it should bloom.
