Pasta Ingredients

  • 8 oz gluten-free pasta (such as penne or fettuccine) Opt for high-quality gluten-free pasta for best results.

Sauce Ingredients

  • 2 tablespoons olive oil For sautéing garlic.
  • 4 cloves garlic, minced Fresh minced garlic for the sauce.
  • 1 cup heavy cream or a dairy-free alternative Use dairy-free for a lactose-free version.
  • 1 cup grated Parmesan cheese or lactose-free version Grated for easy melting.
  • Salt to taste Salt For seasoning.
  • Pepper to taste Pepper For seasoning.
  • Fresh parsley Fresh parsley for garnish Adds color and flavor.

Instructions
 

Cooking the Pasta

  • In a large pot, boil water and cook the gluten-free pasta according to package instructions. Once done, drain and set aside, reserving a cup of pasta water.

Making the Sauce

  • In a large skillet or saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 2 minutes, or until fragrant.
  • Pour in the heavy cream, stirring to combine with the garlic. Allow the mixture to simmer gently for about 3-5 minutes.
  • Gradually add the grated Parmesan cheese, stirring continuously until it melts and creates a thick, creamy sauce. If it gets too thick, add a bit of the reserved pasta water.

Combining and Serving

  • Add the cooked gluten-free pasta to the skillet, tossing until all the pasta is well coated in the creamy garlic sauce. Season with salt and pepper to taste.
  • Divide the pasta into bowls, and garnish with fresh parsley. Enjoy warm!

Notes

For variations, add sautéed vegetables like spinach or protein like chicken or shrimp. For a vegan version, use plant-based cream and skip the cheese.
