  • 1.5 cups gluten-free all-purpose flour
  • 0.5 cups granulated sugar
  • 0.5 cups brown sugar, packed
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 cups unsweetened applesauce
  • 2 large eggs
  • 0.5 cups vegetable oil
  • 1 tsp vanilla extract
  • 0.5 cups chopped walnuts or pecans (optional)
  • 0.5 cups raisins or chocolate chips (optional)

For the Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • 0.5 cups unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  • In a large bowl, whisk together the gluten-free flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.
  • In another bowl, whisk the applesauce, eggs, vegetable oil, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry mixture. Stir until just combined—be careful not to overmix! Gently fold in the chopped nuts and raisins or chocolate chips if you're using them.
  • Divide the batter evenly among the muffin cups, filling each about two-thirds full.

Baking

  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the tin for about 5 minutes, then transfer to a wire rack to cool completely.

Frosting

  • While the muffins are cooling, make the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter together until fluffy. Gradually add the powdered sugar, vanilla extract, and a pinch of salt; beat until smooth and creamy.
  • Once the muffins are cooled, generously spread the cream cheese frosting on top of each muffin.

Notes

Use Quality Gluten-Free Flour: Choose a good blend that includes xanthan gum for the best texture. Ensure ingredients like cream cheese and butter are at room temperature for a smoother frosting. Don’t overbake to prevent dryness.
