For the Cake

  • 2 cups gluten-free all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup unsweetened applesauce
  • ½ cup vegetable oil (or melted coconut oil)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups peeled and diced apples (a mix of sweet and tart varieties) Use Fuji, Gala, and Granny Smith for best results.

For the Cinnamon Sugar Topping

  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish or line it with parchment paper.
  • In a small bowl, combine the granulated sugar and ground cinnamon for the topping. Set aside.
  • In a large mixing bowl, whisk together the gluten-free flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt until well blended.
  • In a separate bowl, mix the applesauce, vegetable oil, eggs, and vanilla extract until smooth.

Mixing and Baking

  • Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix. Gently fold in the diced apples.
  • Pour the batter into your prepared baking dish and spread it evenly. Sprinkle the cinnamon sugar mixture over the top.
  • Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  • Slice and serve warm, with a scoop of vanilla ice cream or a dollop of whipped cream if desired.

Notes

For best flavor, use a combination of sweet and tart apples. Avoid overmixing the batter to prevent a dense texture. Store the cake in a tightly sealed container at room temperature for up to 3 days, or refrigerate for up to a week.
