Preparation

  • In a large bowl, combine the gluten-free flour, baking powder, coconut sugar, and a pinch of salt.
  • In a separate bowl, mix the almond milk, applesauce, melted coconut oil, and vanilla extract.
  • Gradually combine the wet ingredients with the dry ingredients, mixing until a dough forms.

Shaping the Rolls

  • On a lightly floured surface, roll out the dough into a rectangle about 1/4 inch thick.
  • Spread the softened coconut oil or butter across the surface, then sprinkle the cinnamon and sugar mixture generously over the top.

Baking

  • Starting from one edge, gently roll the dough into a log.
  • Slice the log into 12 equal pieces and place them in a greased baking dish.
  • Preheat your oven to 350°F (175°C) and bake the cinnamon rolls for about 20-25 minutes, or until they are golden brown.
  • Let them cool for a few minutes before serving warm.
  • If desired, drizzle with a simple icing made from powdered sugar and almond milk.

Notes

Measure the flour correctly, use room temperature ingredients, and apply proper rolling technique for best results. Store leftovers at room temperature in an airtight container for up to 2 days, or refrigerate for up to a week. For longer storage, freeze well-wrapped rolls.
