For the mug cake

  • 4 tablespoons gluten-free all-purpose flour Use a blend that includes xanthan gum for best results.
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons milk (or dairy-free milk) For a richer result, use full-fat milk or oat milk.
  • 1 tablespoon melted butter or neutral oil
  • 1/4 teaspoon vanilla extract

For the filling

  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon melted butter

For the icing

  • 2 tablespoons powdered sugar
  • 1/2 teaspoon milk
  • Pinch of vanilla

Instructions
 

Preparation

  • Choose a microwave-safe mug (10–12 oz) and lightly grease the inside with a little butter or oil.
  • In a small bowl or the mug itself, whisk together the gluten-free flour, sugar, baking powder, salt, and 1/4 teaspoon cinnamon.
  • Stir in the milk, melted butter, and vanilla until you have a smooth batter.
  • In a separate small bowl, combine the brown sugar, 1/2 teaspoon cinnamon, and 1 teaspoon melted butter to form a paste.

Cooking

  • Pour half the batter into the mug. Add half the filling in a spiral and gently swirl with a spoon.
  • Add the remaining batter, top with the rest of the filling, and swirl a few more times to create a visible cinnamon ribbon.
  • Cook on high in the microwave for 60–90 seconds, checking at 60 seconds to avoid overcooking.
  • While the mug cake cools for a minute, whisk the powdered sugar, milk, and vanilla until smooth.
  • Drizzle icing over the top and enjoy warm.

Notes

Microwave times may vary based on your appliance. If the center is too wet after the initial cooking time, microwave in 10-second increments until set. For best results, serve immediately and consider variations like streusel topping or a maple glaze.
