  • 1 cup Butter Use softened, not melted.
  • 3/4 cup Brown sugar Brown sugar makes the cookies chewier.
  • 1/2 cup White sugar
  • 1 large Egg Helps bind and keeps the center tender.
  • 1 teaspoon Vanilla extract Enhances the cookie flavor.
  • 1 teaspoon Baking soda For lift.
  • 1/2 teaspoon Baking powder For lift without making them cakey.
  • 1/2 teaspoon Salt Enhances chocolate flavor.
  • 1 cup Chocolate chips Semi sweet is classic, but use your favorite type.

Instructions
 

Preparation

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • Cream butter and sugars until fluffy, about 1 to 2 minutes.
  • Add egg and vanilla, then mix until smooth.
  • In a separate bowl, whisk together gluten free flour, baking soda, baking powder, and salt.
  • Mix dry ingredients into wet until no dry streaks are visible.
  • Stir in the chocolate chips.
  • Scoop dough into balls, place on the baking sheet, and gently press the tops.

Baking

  • Bake for 9 to 12 minutes, until edges look set but centers are still soft.
  • Cool on the pan for 10 minutes before moving to allow finishing setting.

Notes

Letting the dough rest for at least 10 minutes can help improve texture. Chilling for 30 minutes is even better, but not necessary.
