Ingredients
  

Chicken Tenders

  • 1 pound boneless, skinless chicken breasts Fresh, quality chicken for best flavor.

Breading Mixture

  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated parmesan cheese (or nutritional yeast for dairy-free) Substitute nutritional yeast for a dairy-free option.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • to taste Salt and pepper

Wet Mixture

  • 2 large eggs Whisked until well beaten.

For Frying

  • as needed Oil for frying (olive oil or avocado oil) Choose your preferred oil.

Preparation

  • Preheat your oven to 400°F (200°C) or heat a large skillet over medium heat for frying.
  • In a bowl, mix gluten-free breadcrumbs, parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  • In another bowl, whisk the eggs until well beaten.
  • Slice the chicken breasts into strips, about 1-inch wide.

Coating

  • Dip each chicken strip first into the eggs, then into the breadcrumb mixture, pressing gently to adhere.

Cooking

  • For baking, place the coated chicken tenders on a greased baking sheet and spray the tops lightly with oil. Bake for 10-12 minutes, flipping halfway through until golden brown.
  • For frying, cook tenders for about 3-4 minutes on each side until crispy and cooked through.

Serving

  • Remove from heat and let the tenders rest for a couple of minutes before serving.

Notes

Use fresh chicken for the best flavor. Experiment with spices for customization. Don’t overcrowd the pan while frying. Make sure chicken reaches an internal temperature of 165°F (75°C).
