Ingredients
  

  • 2 cups cooked shredded chicken
  • 12 small corn tortillas certified gluten free
  • 1 cup shredded Monterey Jack or cheddar cheese optional
  • 1 tbsp taco seasoning
  • 1/4 cup salsa optional, for moisture
  • 2 tbsp vegetable oil for brushing or frying
  • Salt and pepper to taste

Instructions
 

  • In a bowl, mix shredded chicken with taco seasoning, salsa (if using), salt, and pepper. Stir in cheese if desired.
  • Warm corn tortillas in a microwave or skillet until soft and pliable.
  • Place a spoonful of filling near one edge of each tortilla and roll tightly.
  • To fry: Heat oil in a skillet over medium heat. Place taquitos seam-side down and cook until golden and crispy on all sides.
  • To bake: Preheat oven to 400°F (200°C). Arrange taquitos seam-side down on a baking sheet. Brush lightly with oil and bake for 15–20 minutes, until crisp.
  • Serve hot with toppings like shredded lettuce, diced tomatoes, guacamole, or salsa.

Notes

Corn tortillas are naturally gluten free, but always check labels for cross-contamination. Store leftover taquitos in an airtight container and reheat in an oven or air fryer to keep them crispy.
