  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Gluten-free tortillas (mini tortillas work best) Choose high-quality, pliable tortillas.
  • Cooking spray or oil for frying
  • Salsa or guacamole for dipping Optional, for serving.

Preparation

  • Mix the shredded chicken, cheese, green onions, garlic powder, cumin, salt, and pepper in a bowl to create the filling.

Assembly

  • Take a gluten-free tortilla and place a generous spoonful of the filling in the center.
  • Roll it up tightly, folding in the edges as you go. Repeat this process until all your filling is used.

Cooking

  • Heat a skillet over medium heat and add oil or cooking spray.
  • Place the taquitos seam-side down in the skillet and cook for about 2–3 minutes on each side until golden brown and crispy.
  • Alternatively, bake them in the oven at 400°F for about 20-25 minutes.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, bake in the oven until warm and crispy. You can also freeze uncooked taquitos; allow them to thaw in the fridge before cooking.
