Preparation

  • Preheat the oven to 375°F (190°C).
  • Place chicken breasts between plastic wrap and pound to an even thickness of about 1 inch.
  • Season chicken with salt, pepper, and garlic powder.
  • Set up a breading station with whisked eggs in one bowl and a mixture of gluten-free breadcrumbs, Parmesan cheese, and Italian seasoning in another.

Breading and Baking

  • Dip each chicken breast in the egg mixture, letting excess drip off, then coat with the breadcrumb mixture.
  • Place coated chicken on a greased baking sheet, drizzle with olive oil or spray with cooking spray.
  • Bake for 25-30 minutes until cooked through and golden brown.
  • Spoon marinara sauce over chicken and sprinkle with mozzarella cheese. Bake for an additional 5-10 minutes until cheese is bubbly.
  • Let chicken rest for a few minutes before slicing. Serve with pasta or salad.

Notes
