Ingredients
  

Noodles and Chicken

  • 8 oz Gluten-free noodles (such as rice noodles or gluten-free spaghetti)
  • 1 lb Chicken breast, thinly sliced

Vegetables

  • 2 cups Assorted vegetables (bell peppers, carrots, broccoli, snap peas) Feel free to customize with your choice of vegetables.
  • 3 cloves Garlic, minced
  • 1 tbsp Ginger, freshly grated

Sauces and Oils

  • 3 tbsp Soy sauce (gluten-free)
  • 2 tbsp Sesame oil Divided for cooking.

Finishing Touches

  • 2 tbsp Green onions, chopped For garnish.
  • 1 tsp Red pepper flakes Optional, for heat.

Preparation

  • Cook the gluten-free noodles according to the package instructions. Drain and set aside.

Cooking

  • In a large wok or skillet, heat a tablespoon of sesame oil over medium-high heat. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.
  • In the same pan, add another tablespoon of sesame oil if needed. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant. Then add your assorted vegetables and stir-fry for about 5 minutes or until they are tender yet crisp.
  • Return the cooked chicken to the pan, add the gluten-free noodles, and drizzle with soy sauce. Toss everything together until well combined and heated through. Finally, sprinkle chopped green onions and red pepper flakes, if desired.

Notes

To save time, chop the vegetables and slice the chicken ahead of time. Ensure your wok is hot before adding any ingredients to achieve the delicious stir-fried flavor. Avoid overcrowding the pan for best results. Feel free to customize by adding tofu or shrimp.
