Ingredients
  

Noodles

  • 8 oz gluten-free lo mein noodles (or rice noodles)

Chicken & Sauce

  • 1 lb boneless, skinless chicken breast, sliced into thin strips
  • 2 tablespoons gluten-free soy sauce Can substitute with coconut aminos.
  • 1 tablespoon oyster sauce (or a halal alternative)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Vegetables & Aromatics

  • 2 cups mixed vegetables (like bell peppers, carrots, and broccoli) Use fresh, seasonal produce.
  • 2 cloves garlic, minced

Garnishes

  • Green onions, sliced For garnish.
  • Sesame seeds For garnish.

Oil

  • 2 tablespoons olive oil

Instructions
 

Cooking Noodles

  • Bring a large pot of water to a boil. Add the gluten-free lo mein noodles and cook according to package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

Preparing Wok

  • Heat your wok or a large frying pan over medium-high heat. Once hot, add 2 tablespoons of olive oil.

Cooking Chicken

  • Add the sliced chicken to the wok, season with salt and pepper, and stir-fry for about 5-7 minutes until fully cooked. Make sure to keep everything moving to prevent sticking.

Adding Vegetables & Aromatics

  • Toss in the mixed vegetables and minced garlic, continuing to stir for another 3-4 minutes until the veggies are vibrant yet slightly tender.

Combining & Flavoring

  • Add the cooked noodles to the wok, along with the gluten-free soy sauce, oyster sauce, and sesame oil. Stir everything together, ensuring the noodles are evenly coated and heated through.

Serving

  • Once everything is well combined, remove from heat. Serve garnished with green onions and a sprinkle of sesame seeds for that added touch.
