Preparation

  • In a large bowl, combine the ground chicken, gluten-free breadcrumbs, grated Parmesan, beaten egg, parsley, garlic powder, salt, and pepper. Stir until well blended.
  • Using your hands, shape the mixture into small patties, about 2-3 inches in diameter.

Cooking

  • In a large skillet, add olive oil and heat over medium-high. The oil should be hot but not smoking.
  • Place the fritters in the skillet, careful not to overcrowd. Fry them for about 3-4 minutes on each side, or until golden brown.
  • Once cooked, place the fritters on paper towels to remove excess oil. Serve warm, and enjoy their crispy exterior and juicy interior.

Notes

For best results, use gluten-free breadcrumbs and keep the frying oil at the right temperature. You can adjust the seasoning to personalize the flavor.
