  • 12 oz gluten-free fettuccine or pasta of your choice
  • 2 cups cooked chicken, sliced or shredded
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (make sure it’s gluten-free)
  • 1/4 cup unsalted butter
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

Cooking the Pasta

  • Fill a large pot with salted water and bring it to a rolling boil.
  • Add the gluten-free pasta and cook according to package instructions until al dente. Remember to reserve about a cup of pasta water before draining.

Preparing the Alfredo Sauce

  • In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  • Pour in the heavy cream, stirring continuously. Allow it to simmer for 2-3 minutes.
  • Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. If it becomes too thick, add reserved pasta water, a little at a time, until you reach your desired consistency.

Combining Ingredients

  • Add the cooked chicken to the skillet, followed by the drained pasta. Mix everything together until well coated in the sauce.
  • Season with salt and black pepper to taste. Add more Parmesan if desired!

Serving the Dish

  • Garnish with freshly chopped parsley for a pop of color and flavor.
  • Serve immediately and watch your loved ones savor every bite.

Notes

For best results, use high-quality gluten-free pasta. Consider using pre-cooked rotisserie chicken for convenience. The creaminess of the sauce can be adjusted by adding reserved pasta water as needed. Store leftovers in an airtight container in the refrigerator for up to 3 days.
