Ingredients
  

Rolls Base

  • 1 batch gluten free roll dough (homemade or your favorite mix)
  • 2 to 3 tablespoons melted butter
  • 2 to 4 cloves garlic, finely minced (or 1 teaspoon garlic powder)
  • 1 cup shredded mozzarella (plus a little extra for topping)
  • 1/3 cup grated parmesan
  • 1 tablespoon chopped parsley or Italian herbs
  • a pinch salt

Instructions
 

Preparation

  • Preheat your oven to 375°F. Grease a round pan or a square baking dish.
  • Mix melted butter, garlic, salt, and herbs in a small bowl.
  • Divide dough into 12 to 16 pieces. Flatten each piece, add a pinch of mozzarella, then pinch closed into a ball.

Baking

  • Dip or brush each dough ball with the garlic butter, then nestle into the pan.
  • Sprinkle parmesan and a little extra mozzarella on top.
  • Let them rise until they look puffy, usually 20 to 35 minutes depending on your kitchen.
  • Bake for 18 to 25 minutes until golden and the centers are cooked through.
  • Brush with any leftover garlic butter right after baking for that glossy, garlicky finish.

Serving

  • If you love a crispier top, put the pan on the upper third rack for the last 3 to 4 minutes.

Notes

Shape the dough balls, place in the pan, cover, and refrigerate overnight to make ahead. For a twist, try pairing with gluten-free creamy garlic pasta.
