Ingredients
  

  • 1 1/2 cups gluten-free graham cracker crumbs or crushed gluten-free cookies
  • 1/4 cup melted butter
  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Optional toppings: fresh berries chocolate drizzle, or sea salt

Instructions
 

  • Preheat oven to 325°F (160°C) and line a mini muffin tin with paper liners.
  • Combine gluten-free crumbs and melted butter, then press a spoonful into each liner to form the crust.
  • In a bowl, beat cream cheese and sugar until smooth.
  • Add eggs one at a time, then mix in vanilla extract.
  • Spoon cheesecake mixture over each crust, filling nearly to the top.
  • Bake for 15–18 minutes, until centers are set.
  • Cool completely, then refrigerate for at least 2 hours.
  • Top with your favorite toppings before serving or freeze for later.
