Cook your chosen gluten-free grain according to package directions. For rice or quinoa, this typically involves combining 1 cup of grain with 2 cups of water or broth in a pot, bringing to a boil, then reducing heat, covering, and simmering until liquid is absorbed and grain is tender (about 15-20 minutes for quinoa, 18-20 minutes for white rice, or 40-45 minutes for brown rice).
While the grain is cooking, heat olive oil in a large skillet over medium heat.
Add the ground meat to the skillet and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
Add the chopped broccoli florets, diced carrots, and diced zucchini to the skillet with the cooked meat. Sauté for 5-7 minutes, or until vegetables are tender-crisp.
