  • 2 1/4 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine salt

  • 1 cup warm milk (dairy or plant-based) Warm to encourage dough consistency.
  • 2 tablespoons neutral oil Plus extra for frying.
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting Generously dust while warm.

Instructions
 

Prepare the dough

  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In a separate bowl, beat eggs with warm milk, oil, and vanilla.
  • Pour the wet ingredients into the dry and stir until a soft, slightly sticky dough forms.
  • Let the dough rest for 10 minutes to hydrate.

Heat the oil

  • Pour oil into a deep, heavy pot to a depth of about 2 inches.
  • Heat to 350°F (175°C) using a thermometer for accuracy to prevent greasy or undercooked centers.

Shape and fry

  • Dust a work surface with flour and pat the dough to 1/2-inch thickness.
  • Use a biscuit cutter or knife to cut 2–3 inch squares.
  • Fry 3–4 beignets at a time, turning once, until golden brown (about 2 minutes per side). Adjust heat to maintain 350°F.

Drain and dust

  • Transfer beignets to a paper towel-lined tray.
  • Dust generously with powdered sugar while still warm.

Notes

Best eaten the day they’re made for fullest crispness. To store, cool completely, then place in an airtight container with a paper towel to absorb moisture for up to 24 hours. Reheat in a 350°F oven for 5–7 minutes to restore crispness.
