Ingredients
  

  • 1 lb ground beef (85/15 preferred)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 15 oz black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 14 oz diced tomatoes, drained
  • 1/2 cup tomato sauce
  • 6–8 gluten-free tortillas (soft corn or flour-style)
  • 2 cups shredded Mexican-blend cheese (or cheddar, Monterey Jack)
  • 1/4 cup chopped green onions
  • 1 jalapeño, thinly sliced (optional)
  • fresh cilantro (optional topping)
  • sour cream or Greek yogurt (optional topping)
  • salsa or hot sauce (optional topping)
  • diced avocado or guacamole (optional topping)

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Sauté onion for about 5 minutes until translucent. Add garlic and cook for 30 seconds until fragrant. Add ground beef and cook until browned, breaking it up as it cooks.
  • Sprinkle in chili powder, paprika, cumin, oregano, salt, and pepper. Stir well. Add black beans, corn, diced tomatoes, and tomato sauce. Simmer for 10 minutes to let the flavors meld.
  • Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil or cooking spray.
  • Layer tortillas at the base of the dish, tearing to fit. Add a third of the beef mixture, then a layer of cheese. Repeat with tortillas, beef, and cheese for a total of three layers. Finish with cheese, green onions, and jalapeños if using.
  • Cover with foil and bake for 20 minutes. Remove foil and bake another 10–12 minutes until the cheese is golden and bubbly.
  • Let the bake rest for 5–10 minutes before slicing. Top with sour cream, salsa, cilantro, or avocado as desired.

Notes

To make it dairy-free, use your favorite vegan shredded cheese and non-dairy sour cream. Crushed tortilla chips or cornflakes can be used for a crunchy topping. This dish is ideal for meal prep and can be frozen before or after baking.
