Ingredients
  

Pasta

  • 12 ounces gluten free ziti or penne pasta Opt for a gluten-free pasta that holds up well in baking.

Sauce

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound ground beef or turkey (or a plant-based substitute)
  • 4 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Cheese

  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring salted water to a boil and cook the gluten-free ziti or penne until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until fragrant and translucent.
  • Add the ground beef or turkey and cook until browned. Pour in the marinara sauce and add Italian seasoning, salt, and pepper. Let it simmer for about 5 minutes.

Mixing

  • In a mixing bowl, combine the ricotta cheese, half of the mozzarella, and half of the Parmesan. Mix well and season with a pinch of salt and pepper.

Layering

  • In a large baking dish, spread a layer of the meat sauce on the bottom.
  • Add half of the cooked pasta, followed by dollops of the cheese mixture. Repeat the layers, finishing off with the remaining meat sauce.

Baking

  • Sprinkle the remaining mozzarella and Parmesan cheese over the top layer.
  • Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for an additional 15 minutes until the cheese is golden and bubbly.
  • Let it cool for a few minutes before serving, garnished with fresh basil.

Notes

You can assemble this dish a day in advance and keep it in the refrigerator until you’re ready to bake. Feel free to add vegetables like spinach, bell peppers, or mushrooms for extra nutrition.
