  • 2 cups cooked chicken, shredded
  • 1 cup gluten-free taco seasoning
  • 1 cup shredded cheese (like cheddar or Mexican blend)
  • 8 pieces gluten-free tortillas Check for gluten-free certification.
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)

Optional Toppings

  • diced tomatoes For freshness and flavor.

  • sour cream For a tangy taste.
  • cilantro For garnish and flavor.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the shredded chicken with the gluten-free taco seasoning until well-coated.

Assembly

  • Layer the seasoned chicken, black beans, and corn in each tortilla. Sprinkle cheese on top.
  • Fold the tortillas around the filling and place them seam side down in a greased baking dish.

Baking

  • Cover the dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes to allow the cheese to bubble and the tortillas to crisp slightly.

Serving

  • Allow to cool slightly before serving. Customize your tacos with favorite toppings like diced tomatoes, avocado, and sour cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a preheated oven at 350°F (175°C).
