Preparation

  • In a large mixing bowl, combine the shredded chicken, dairy-free cheese, and taco seasoning. Stir until everything is well mixed.

Warm the Tortillas

  • Warm the gluten-free tortillas in a skillet over low heat for about 30 seconds on each side to make them pliable.

Assemble the Taquitos

  • Take a spoonful of the chicken mixture and place it on one edge of each tortilla. Roll them tightly to secure the filling.

Bake

  • Preheat your oven to 425°F (220°C). Place the rolled taquitos seam-side down on a baking sheet. Lightly brush them with olive oil.
  • Bake the taquitos for about 15-20 minutes, turning halfway through, until they are golden brown and crispy.

Notes

For best flavor, consider using leftovers from a roast chicken or seasoned grilled chicken. Experiment with different gluten-free tortillas, as they can vary greatly in texture and taste. Enhance the mixture by adding sautéed vegetables or a spicy kick with jalapeños.
