  • 1 pound baby potatoes, halved

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the olive oil, minced garlic, Italian herbs, salt, and pepper. Mix well.
  • Add the chicken thighs to the marinade, ensuring they are well-coated. Allow them to sit for about 15 minutes.
  • In another bowl, toss the halved baby potatoes in the remaining marinade and spread them in a single layer on a baking sheet.

Cooking

  • Place the marinated chicken thighs on the baking sheet with the potatoes. Sprinkle the grated Parmesan cheese over the top.
  • Bake in the preheated oven for about 40-45 minutes, until the chicken is fully cooked and the potatoes are tender.
