  • 1.5 pounds sirloin steak, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon smoked paprika
  • 1 tablespoon fresh parsley, chopped

Preparation

  • Pat the steak cubes dry with paper towels to promote a great sear. Season evenly with salt, pepper, and smoked paprika.

Cooking

  • Warm a large heavy skillet over medium-high heat. Add olive oil and let it shimmer.
  • Add steak cubes in a single layer, do not overcrowd. Cook without moving for 2 minutes to develop a crust, then flip and sear another 1–2 minutes. Work in batches if necessary.
  • Reduce heat to medium. Push steak to the side, add butter to the pan, then stir in minced garlic. Spoon the garlic butter over the steak for 1 minute until aromatic and the butter is lightly browned.
  • Remove from heat, toss with parsley and a squeeze of lemon if using. Serve immediately over mashed potatoes, roasted root vegetables, or a grain bowl.

Notes

For best results, make sure to dry the steak well before cooking to achieve a perfect sear. Let steak rest briefly after cooking for juicier bites. Adjust the cooking time if you prefer less doneness.
