  • 1.5 pounds beef sirloin or ribeye, cut into 1-inch cubes Use lean, tender cuts for the best results.
  • 3 tablespoons unsalted butter Divide into two portions for cooking and sauce.
  • 2 tablespoons olive oil For searing the steak.
  • 4 cloves garlic, finely minced Adds flavor to the sauce.
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon freshly ground black pepper
  • 0.75 teaspoon salt Adjust to taste.
  • 1 tablespoon fresh parsley, chopped For garnish.
  • to taste red pepper flakes Optional for added heat.

Preparation

  • Pat the steak cubes dry with paper towels—dry meat sears better.
  • Season evenly with salt, pepper, and smoked paprika.

Cooking

  • Warm a large heavy skillet (cast iron is ideal) over medium-high heat.
  • Add olive oil and 1 tablespoon of butter.
  • Add the steak cubes in a single layer without crowding.
  • Sear for 1-2 minutes per side until a golden crust forms.
  • Transfer seared bites to a plate.
  • Reduce heat to medium, add the remaining butter, and stir in the minced garlic.
  • Cook for 30–45 seconds until fragrant—do not brown the garlic.
  • Return all steak bites to the skillet and toss to coat in the garlic butter sauce for 1 minute.
  • Sprinkle with chopped parsley and a pinch of red pepper flakes if using.
  • Serve immediately.

Notes

Make sure the steak pieces are well dried to achieve a good sear. Let the plated bites rest for 2 minutes before serving.
