Ingredients
  

  • 4 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tsp fresh thyme (or ½ tsp dried thyme)
  • 1 bay leaf
  • 4 cups beef broth (or vegetable broth for vegetarian version)
  • 1 cup water
  • 1 tsp apple cider vinegar or balsamic vinegar
  • 4 thick slices gluten-free rustic bread
  • 1 cup shredded Gruyère or mozzarella cheese

Instructions
 

  • Heat olive oil and butter in a heavy-bottomed pot over medium-low heat. Add sliced onions and cook for about 40 minutes, stirring occasionally, until deeply golden and caramelized. Season with salt, pepper, thyme, and bay leaf.
  • Add vinegar to deglaze the pot. Pour in the broth and water. Bring to a simmer, then reduce heat and cook uncovered for 25 minutes. Adjust seasoning as needed. Discard the bay leaf before serving.
  • While soup simmers, toast the gluten-free bread slices in a 375°F oven until golden and crisp.
  • Ladle hot soup into oven-safe bowls. Top with toasted bread and shredded cheese. Broil for 3–5 minutes until bubbly and golden. Serve warm.

Notes

Use rustic gluten-free bread that holds up well in broth. For a lighter version, opt for vegetable broth. If making dairy-free, swap butter and cheese with plant-based alternatives. Store leftovers without bread and cheese to retain texture.
