Wet Ingredients

  • 1 cup cottage cheese (preferably low-fat)
  • 4 large eggs
  • 1/4 cup honey or maple syrup Adjust based on your sweetness preference
  • 1 tsp vanilla extract

Dry Ingredients

  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1 pinch salt

Add-ins

  • 1 cup blueberries (fresh or frozen) If using frozen, no need to thaw

Preparation

  • Preheat your oven to 350°F (180°C). Line a loaf pan with parchment paper for easy removal later.
  • In a large mixing bowl, combine the cottage cheese, eggs, honey or maple syrup, and vanilla extract. Whisk until thoroughly blended and creamy.
  • In a separate bowl, mix together the almond flour, coconut flour, baking powder, and salt. Slowly fold the dry mixture into the wet ingredients until just combined. Be careful not to overmix!
  • Gently fold in the blueberries. Your batter may take on a lovely swirl of color if using frozen blueberries.
  • Pour the batter into the prepared loaf pan, spreading it evenly.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Remove the bread from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack. Once cooled, slice and serve warm or at room temperature.

Notes

For an extra fluffy texture, separate egg whites from yolks, whip whites until stiff peaks form, and gently fold into the batter. Store bread in an airtight container at room temperature for up to 2-3 days or refrigerate for up to a week.
