Ingredients
  

  • 4 oz high-quality dark chocolate (70% or more)
  • 1/4 cup unsalted butter (or plant-based butter)
  • 2 whole eggs
  • 2 egg yolks
  • 1/4 cup granulated sugar or coconut sugar
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • cocoa powder (for dusting ramekins)
  • Optional: powdered sugar, berries, or vanilla ice cream

Instructions
 

  • Preheat oven to 425°F (220°C). Grease 4 ramekins and dust with cocoa powder to prevent sticking.
  • Melt the dark chocolate and butter together over a double boiler or in the microwave in short bursts. Stir until smooth.
  • In a separate bowl, whisk the eggs, egg yolks, sugar, vanilla, and salt until pale and slightly thickened.
  • Slowly pour the warm chocolate mixture into the egg mixture, stirring constantly until fully combined.
  • Divide the batter evenly among the prepared ramekins. Place ramekins on a baking tray.
  • Bake for 12–14 minutes until edges are set but centers still jiggle slightly.
  • Let cool for 1 minute, then run a knife around edges and invert onto plates. Dust with powdered sugar and serve warm with berries or ice cream.

Notes

Use high-quality chocolate for the best flavor, and don’t overbake the center should stay molten. Room-temperature eggs whisk more smoothly for a silky batter. Greasing and dusting ramekins with cocoa ensures a clean release.
