  • 4 large eggs
  • 1 large ripe banana (mashed) Can be substituted with applesauce.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional) For added flavor.

Preparation

  • In a blender or food processor, combine the cottage cheese, eggs, mashed banana, vanilla extract, cinnamon, and a pinch of salt. Blend until you achieve a smooth batter.
  • If you prefer a few cottage cheese lumps for texture, blend for a shorter time.

Cooking

  • Place a non-stick skillet over medium heat and add a small amount of butter or oil to coat the bottom.
  • Once the skillet is hot, use a ¼ cup measure to pour the batter onto the skillet. Space them out to allow for spreading as they cook.
  • Let the pancakes cook for about 2-3 minutes, or until bubbles start to form on the surface.
  • Carefully flip the pancakes and cook for another 2-3 minutes, or until golden brown.
  • Remove from the skillet and keep warm.
  • Serve your pancakes warm, drizzled with maple syrup, topped with fresh fruits, or a dollop of Greek yogurt.

Notes

Keep a close eye on the skillet's heat. If it’s too hot, the pancakes will burn before cooking through. Aim for medium heat for even cooking. These pancakes can be topped with nuts or berries for added flavor.
