  • 1 packet instant yeast (2 ¼ teaspoons)
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1 teaspoon vinegar (apple cider or white)
  • Herbs or garlic (optional for flavoring)

Preparation

  • In a large mixing bowl, combine the gluten-free flour, salt, sugar, and instant yeast. Mix well, then add the warm water, olive oil, and vinegar. Stir until a sticky dough forms.
  • Cover the bowl with a damp cloth or plastic wrap, and let the dough rise in a warm place for about 30 minutes until it expands and becomes puffy.
  • Use a spatula to gently scoop the risen dough onto a well-floured surface. With floured hands, divide the dough into equal portions (about 8-10) and shape each portion into rolls.
  • Place the formed rolls on a parchment-lined baking sheet and loosely cover them. Let them rise again for another 20 minutes.
  • Preheat your oven to 425°F (220°C). Bake the rolls for 15-20 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  • Remove the rolls from the oven and let them cool on a wire rack. Serve warm, ideally enjoyed with a drizzle of honey or a slather of butter.

Notes

Use a kitchen scale for accurate measurements, particularly for gluten-free flour. Always check your yeast for activity before use. You can experiment by adding garlic powder or herbs for more flavor.
