  • 1 pound ground chicken
  • 1/2 cup gluten-free flour (such as almond flour or brown rice flour)
  • 1/4 cup grated Parmesan cheese (optional) for extra flavor
  • 1 cup chopped vegetables (zucchini, onion, or bell peppers) choose your favorite
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1/4 cup oil for frying

Preparation

  • In a large mixing bowl, combine ground chicken, gluten-free flour, Parmesan cheese (if using), chopped vegetables, eggs, garlic powder, onion powder, salt, and pepper. Mix thoroughly until all the ingredients are well-integrated.

Cooking

  • In a large skillet, heat about 1/4 cup of oil over medium heat.
  • Once the oil is hot, use a tablespoon to scoop the mixture and carefully drop it into the skillet, flattening each fritter slightly with the back of the spoon.
  • Cook for about 3-4 minutes on each side or until golden brown. Avoid overcrowding the skillet.

Serving

  • After frying, place the fritters on a paper towel-lined plate to absorb any excess oil. Serve warm with a dipping sauce such as yogurt sauce or dairy-free chicken Alfredo.

Notes

To store leftovers, keep them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for crispiness.
