Ingredients
  

  • 2 1/2 cups gluten-free 1-to-1 flour blend (with xanthan gum)
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 3/4 cup coconut sugar or cane sugar
  • 4 large eggs (room temperature)
  • 3/4 cup neutral oil (sunflower or avocado)
  • 1 cup almond milk or oat milk
  • 1 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • 1 cup dairy-free butter
  • 3 1/2 cups powdered sugar
  • 2–3 tbsp almond milk
  • 1 tsp vanilla extract (for frosting)

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease two 8-inch round pans and line the bottoms with parchment paper. In a bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  • In a large bowl, whisk the eggs, oil, almond milk, apple cider vinegar, and vanilla. Gradually fold in the dry mixture, stirring until just smooth. Do not overmix.
  • Divide the batter evenly into the prepared pans. Bake for 25–28 minutes or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  • Beat the dairy-free butter until creamy. Gradually add powdered sugar, vanilla, and almond milk. Beat until smooth and fluffy. Frost the completely cooled cake layers.

Notes

Use a quality 1-to-1 gluten-free flour blend with xanthan gum. Don’t skip the vinegar  it helps the cake rise perfectly. Let the layers cool fully before frosting to avoid crumbling. For variation, try adding chocolate chips, lemon zest with blueberries, or a cinnamon swirl.
