Ingredients
  

For the Apple Filling

  • 6 medium medium apples, peeled, cored, and sliced Granny Smith or Honeycrisp work well
  • 2 tablespoons lemon juice
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon cornstarch (or arrowroot powder)

For the Topping

  • 1 1/2 cups gluten-free rolled oats
  • 3/4 cup gluten-free all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold unsalted butter, cubed
  • 1/3 cup chopped nuts (optional)

Instructions
 

Preheat and prepare

  • Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking dish or similar-sized pie dish.

Prepare the apples

  • In a large bowl, toss the sliced apples with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch until evenly coated.
  • Transfer the apple mixture to the prepared baking dish, spreading it into an even layer.

Make the topping

  • In a medium bowl, combine gluten-free rolled oats, gluten-free flour, brown sugar, salt, and cinnamon.
  • Add the cubed cold butter and use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized chunks.
  • Stir in chopped nuts if using.

Assemble and bake

  • Sprinkle the topping evenly over the apples.
  • Bake for 40–45 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges.

Cool and serve

  • Let the crisp cool for 10–15 minutes before serving to allow the filling to set for easier scooping.

Notes

For best results, use a mix of tart and sweet apples. Don’t skip the cornstarch, as it thickens the juices. Cold butter is key for creating crunchy topping. You can also make ahead and refrigerate the unbaked crisp for up to 8 hours before baking.
